Chef John Simmons always wondered why fries were usually only seasoned with salt. To make simple fries fit the exclusivity of the restaurant’s tapas menu, he seasons them not only with kosher salt but pepper, Parmesan cheese and chopped parsley. “The fries come out soft and steamy and creamy and light on the inside and perfectly brown and crunchy on the outside,” he says.
