Rum—don’t walk!—to experience Tommy Bahama’s growing collection

“We knew we had a genuine opportunity to build one incredible rum collection,” says “Rummelier” Rob Aspaas. The collection at Tommy Bahama’s Tropical Cafe (in Town Square) now stands at 172 bottles, making it Vegas’ largest; the goal is to amass the largest collection in North America. “We’re diving into a fascinating world with this rum collection and we want our guests to sit back, relax, and enjoy what we’re doing with it,” Aspaas says.

A few highlights from the collection selected especially for Vegas Seven:

Gosling’s Family Reserve Old Rum

Bermuda rum distilled from fermented molasses and aged in whiskey/bourbon barrels. Each bottle is hand-numbered and displays the rum’s origin. Received a 96 rating from Wine Spectator. Only 1,000 cases were sold to the U.S. $19 for a 2-ounce pour.


Agricole rum, which is made from hand-pressed sugarcane, aged five years. This particular sugarcane is grown in the volcanic soils of Martinique. $19 for a 2-ounce pour.

Appleton 30-Year

A blend of Jamaican rums is individually aged a minimum of eight years and then aged an additional 22 years in the highest quality oak barrels. Just 1,440 bottles were distributed worldwide, and only 744 bottles went to the United States. $65 for a 2-ounce pour.
