With a menu rivaling that of many restaurants on the Strip, Vintner Grill is the often-touted queen bee of Summerlin dining. If the queen had a favorite dish it might just be the halibut. Pan-seared till it’s crispy on the outside and moist throughout, the halibut is served on a bed of couscous, spinach, toasted orzo, lemon gremolata and sweet tomatoes. Light and perfectly cooked, this dish stands out on an already outstanding menu. $29, 10100 W. Charleston Blvd., Suite 150, 214-5590.
