Braised Beef Short Ribs at Gaetano’s

This occasional dinner special at Henderson’s best Italian restaurant recently became a full-time menu star. The ribs, pan-seared and then baked until fabulously tender, are worthy of that billing. But the reason customers kept pestering Gaetano Palmeri to make the dish every night is that his sauce is so irresistible. The secret, he says, is “a lot of wine,” including port and cabernet, and it also features carrots, onions, tomato paste and a hint of rosemary.
