José Andrés has done it once again, turning a simple piece of food such as a green olive into a dining adventure. These green olives—which Andrés refers to as his Liquid Olives—have become a staple at his fine dining restaurants across the globe. As soon as the “olive” touches your tongue, it immediately bursts into a delicious olive liquid with a dash of salt. It will not only amaze your taste buds but your mind as well. $12 for four plus four traditional olives stuffed with anchovy and piquillo, in the Cosmopolitan, 698-7950, Jaleo.com.
