CIA grad Geno Bernardo is the Executive Chef at Nove, the terrific
Italian restaurant atop the Palms Fantasy Tower. He’s begun sourcing
organic greens from a grower in Pahrump named Patrick Tipton, a farm boy
from Oregon who shuns the fast life down here.
I’ve been a fan of Nove since Day One. Booths are upholstered in
masculine looking hides that turn out to be high quality vinyl. Fiber
optic lights, glowing cylinders that look like a computer on an alien
spacecraft, and an illuminated walk-in wine cellar are just a few of the
many eccentric design features in this 52nd floor view restaurant.
Geno’s cooking spans the entire Italian peninsula, as does that of his
peer, Mario Batali. Crudo, Italian sashimi, is a hot trend at the
moment, and no one in town does it better; there is always lots of sushi-quality amberjack, tuna and yellowtail around, splashed with extra
virgin olive oil and heated up with peppers.
