Grilled Artichokes at Nora’s Wine Bar & Osteria

Not exactly the giant softball-size variety known for numbing your palate to the subtleties of a fine wine. These grilled baby artichokes, drizzled with extra virgin olive oil, are much smaller and perfect with a zesty, citrusy sauvignon blanc. With this dish you get plenty of those sweet, tender hearts wrapped in a few more mature leaves for dipping. The choke and stalk are edible and so delicious when they get a little caramelization on them from the grill. Dip in the proffered lemon aoli and marvel at this healthy, natural fast food. $12 for four halves, 1031 S. Rampart Blvd., 940-6672.

Ron Lutz

Ron Lutz is exactly what would imagine your local butcher to look like: short, stocky build; thick hands toughened by years of cutting meat; and a mustache that perfectly embodies his East Coast upbringing. A second-generation butcher, Lutz moved to Las Vegas with his family in 1985 from Pittsburgh right before his senior year of high school. After finishing his education at the Southern Nevada Vocational Center, Lutz followed in his father’s footsteps and began a two-year apprenticeship at two supermarkets, J&J and Lucky (now Albertsons).
