Famous French chef Jean-Georges Vongerichten spent years cooking in five-star hotels in Southeast Asia, and many dishes at his steak house reflect this multicultural sensibility. His Chilean sea bass is roasted and covered in a miso-yuzu glaze. It’s served on a bed of tender grilled maitake mushrooms and garnished with sesame seeds. The dish’s decidedly Asian flair makes it an interesting alternative to more traditional steak house surf offerings. $39, in Aria, 590-8544.
