It seems like a typical spinach salad until you notice the sunny-side-up egg staring you right in the face. Go ahead, break it open and let the yolk soak in because that’s what makes this salad uniquely delicious. Over a bed of fresh spinach leaves are sprinkled roasted tomatoes, grilled artichokes and shaved red onion.
