Stuffed Dates at Firefly

John Simmons, chef and managing partner of Firefly, says this dish has been a top-seller since the local chain’s debut. “We take a gooey Medjool date, remove the pit and replace it with a smoked almond, then wrap it in thick-cut apple wood-smoked bacon, lightly fry ’em and sauce them with a tangy red-wine sauce and top with blue-cheese crumbles. One common complaint I hear is how Vegas lacks quality Mexican food. But few of these people ever bother to check out mom-and-pop restaurants such as Los Antojos or Los Molcajetes, places serving creative and authentic dishes at absurdly low prices. Now, we can add to that list Los Jarochos, at the busy crossing of Rainbow and Tropicana, which could be the best of them all. Six of us feasted there for less than $90, and as I recall, I didn’t see a single one of my friends from nearby Spanish Trail in the restaurant.
