Sam DeMarco is one of the most creative chefs in America, and his appetizers at First Food & Bar are deliciously excessive. Who else would think of making Philly cheesesteak dumplings or pulled-pork egg rolls, two dishes credited to him that are often copied around the city? First Chopped is said to be a salad, but it’s really a deconstructed falafel in a lettuce cup. The warm goat cheese “soufflé” is crusted with pistachios and embellished with brandied cherries. And blackened mahi fish tacos get chipotle sour cream.
