To taste the smokiest, most tender ribs in the Valley, you have to either find the Top Notch Barbeque food truck (call 883-1555 or visit TopNotchBarbeque.com for times and locations) or throw a party (they do catering and special events). But it’s worth the effort. The rib meat falls off the bone thanks to slow cooking, and the sides, such as cowboy baked beans redolent of smoky rib tips, are exemplary.
