Capture the summer—and a Tuscan summer no less—in a glass at Brio Tuscan Grille. A take on the Bee’s Knees (gin, honey, lemon juice), the Citrus Grove Sparkler goes many steps beyond that Prohibition-era classic (a great example of which can be enjoyed at Herbs & Rye, 982-8036) with both lemon and orange juice, as well as mint and a lively little Italian touch with the introduction of sparkling Prosecco. While it pairs well with light salads and appetizer fare, we think it’s best enjoyed beside the firepit on Brio’s breezy terrace, perhaps just before sundown.

“In focusing on fresh ingredients and balanced flavors, we wanted to play on the herbal qualities in the gin and enhance them with the brightness of the mint and the smokiness of the honey,” beverage manager Angelica Sbai says. “The citrus creates a good base for these flavors to mingle around.” Cocktails and mingling? We’re so there.

In a cocktail glass, combine 1½ ounces Beefeater gin, 1 ounce honey syrup (equal parts honey and water), 6 fresh mint leaves, ½ ounce freshly squeezed lemon, ½ ounce freshly squeezed orange juice. Strain over fresh ice into a chilled Collins glass and top with a splash of Prosecco. Garnish with an orange slice and a sprig of mint.
