Sean Roe is one of the best chefs on the Strip, but somehow, he’s still flies under the radar. He did a great job at Hank’s Fine Steaks in Green Valley Ranch, and now he is cooking for Emeril at Table 10, where he’s done wonders. The candied North Country Smokehouse bacon features fatty and succulent strips of bacon served with a Noble Tonic No. 1 bourbon barrel-aged maple syrup dipping sauce, making it one of the best combinations of sweet and salty available. $7, in the Palazzo, 607-6363.
