This isn’t your typical bright yellow mac and cheese. P.J. Clarke’s version is more like lobster bisque that happens to have orecchiette pasta in it. The sauce itself is creamy and fragrant like a proper bisque should be, while large hunks of lobster—a whole pound at dinner, along with peas and mushrooms—are studded throughout.
