This retro finger-food has been popping up on menus to great fanfare. Central’s version features beautiful, golden yolks that have been deviled with mayonnaise and a hint of mustard, then piped back into their former whites and topped with caviar. The pièce de résistance is the wonderfully briny anchovy on top for that extra dose of umami. $7, in Caesars Palace, 650-5921, CentralLV.com.
