Tater Tots, Old Homestead

The new Caesars Palace outpost of this New York-based steak house definitely has some only-in-Vegas tricks up its sleeve. The freshly shredded, cheese-filled tater tots appear on the original menu, and here they are painstakingly handmade daily. The truly Las Vegas touch? Fat Boy Sauce—basically the best baked potato toppings: sour cream, bacon and cheddar cheese—for dipping. $12, in Caesars Palace, 888-346-4642.

Tony Abou-Ganim, who arrived here at Steve Wynn’s invitation to roll out Bellagio’s opening beverage program, created two of these.
