Pork Jerky, Le Thai

By Grace Bascos

Don’t let the term “jerky” fool you. The flavorful and juicy marinated bites of pork that make up this downtown darling’s starter are a far cry from the thin, leathery strips the name may evoke. Sticky rice and chef Daniel Coughlin’s outstanding, bright and balanced “waterfall” sauce—made of fish sauce, chilies, cilantro, lime and sugar—come on the side. Dip the pork into the sauce and chase it with rice and they all sing in harmony.
