Although beet salads are on nearly every menu in town, this one stands out. Served warm, the sweetness of the cubed beets is intensified by the salt-roasting and the time they spend in the oven. Tangy goat cheese is whipped airy and light, and pistachios bring back some earthiness and crunch.
