Combine a weekly late-night food-truck gathering with a little friendly competition between Strip chefs, and the toques are off. The Back of the House Brawl—the brainchild of Jolene Mannina, the Queen of Mobile Dining—has lured chefs better known for their haute cuisine and crammed them into the back of the city’s best gourmet trucks. Armed with a basketful of secret ingredients—from bacalao to Brussels sprouts, or just a theme, like the famed Grilled-Cheese Battle—the chefs have to rely on what’s in the truck to create dishes to please a panel of motley judges. What comes out of these tiny kitchens is often pure magic.
