If you want to see what chefs and foodies eat in the wee hours, you’ll want to go Asian. And Kyara is the hot spot. This restaurant is a rabbit warren of semi-private rooms with an L-shaped counter that affords direct views of the chefs working their magic on dishes like grated mountain potato on a hot iron plate and agedashi tofu, a form of deep-fried tofu in dashi (fragrant Japanese broth). Yasuo Komada of Naked Fish is the chef; you’ll spot him grilling skewered meat on a hibachi well after most of his peers have gone to sleep.
