Nigiri sushi is a form that follows a strict protocol regarding perfectly cut, impeccably fresh seafood placed delicately on clumps of vinegared rice. And it is the most bastardized form of eating in this city, thanks to a plethora of second-rate practitioners. But Kabuto, in the newly renamed Tokyo Plaza, soars above the competition with fish sourced from as far away as Japan, and sushi masters able to literally come within five grains of rice in every clump they fashion.
