Although we’re a long way from Belgium and traditional moules frites, there’s nothing wrong with some only-in-America versions. Morels’ riff on the classic dish involves plump, briny mussels bathed in smoky Neuske’s bacon, chowder-style corn and a cream sauce, served with crisp frites. The effervescent fruitiness of the Hefeweizen is ideal for slicing through all that richness.
