It’s not fall without some apples, and the best way to have them—we think—is on a stick and coated in caramel. The second best way is to put both in a cheesecake. Grimaldi’s has it right, with a concoction of crisp green apples and gooey caramel made into a rich, but appropriately dense cream-cheese filling. More caramel is drizzled on top for an extra burst of sweetness.
