As National Vegetarian Month eases into National Vegan Month, it’s nice to know that pizza can remain on the menu. The pizza joint in Mandalay Place has taken beloved cheese and substituted it with the dairy-free Daiya mozzarella, which actually does the job. Topped with zucchini, squash, red onion, roasted peppers and eggplant, it’s like Italian caponata landed on a crust.
