Springs Café, catered by the Culinary Academy of Las Vegas, has debuted new items on its winter menu, including more healthful options as well as choices for vegetarians. The butternut-squash bisque is in the vegetarian—but not necessarily healthful—camp. The creamy soup is hearty and silky, dressed with cinnamon crème frâiche for some spice and contrast.
