Lobster bisque is itself a star on bistro menus, but Payard adds a classic touch by making this dish’s centerpiece the quenelles, or poached dumplings, in this case ground whitefish. The bisque is fragrant and rich, while the quenelles are fluffy and light, absorbing the essence of the bisque.
