The Woo family’s latest restaurant in the Hard Rock Hotel has an array of Chinese-American dishes that are exceptional, but it’s under the Provincial Favorites section of the menu where they shine. This light dish features tender, skinned Chinese eggplant and strips of lean pork sautéed in just a bit of garlic and soy, but each bite is packed full of flavor. $15, 522-8188, HardRockHotel.com.
