Bachi Burger’s sister ramen shop next door features the standard ramen soup bases, such as shoyu and miso, but the silky and full-bodied tonkotsu is where it’s at. A bowlful of the cloudy broth is served with chewy noodles and slices of appropriately fatty pork, as well as umeboshi (a Japanese plum), bamboo shoots and wood-ear mushrooms.
