Mimmo Ferraro’s version, as part of his Chef Mimmo Experience (and after five or so courses, it definitely counts as an “experience”), is a standout as the midpoint of the meal. The pasta is made in-house, and is made properly, with speck, pancetta, eggs and cheese.
