Never mind the sneaky-hot barbecue sauce on every table, or the enormous cast-iron drums in the parking lot where meats here are smoked low and slow. Rollin Smoke is possibly the best-ever barbecue joint in Vegas, opened by some good-old boys from Arkansas. The tender ribs and brisket have that de rigueur smoke ring; the chicken is moist, without the usual rubbery skin; and the side dishes—particularly an amazing, buttery cornbread—are state of the art.
