The rambling, cavernous dining rooms at Delmonico Steakhouse bring to mind the wine cellar of some billionaire’s Swiss manse. But enticing as that sounds, the bar is where it’s at. Because that’s where beverage manager and lead bartender Max Solano presides over his 530-bottle whiskey collection like a judge. He’ll serve it to you neat, with a bucket of cubes and silver tongs. Wanna try a Tasmanian single malt? He’s got it. His is also the only bar in Las Vegas to offer the complete Pappy van Winkle line (watch Justified?), as well as the entire Antique Collection from Buffalo Trace. And then there are the cocktails: 27 great originals and classics—try the Scarlet Starlet. The secret menu arrives upon request when Solano is present, now with five new creations. Not afraid to layer flavor upon flavor, he’ll layer whiskey and rum, or use two or more bitters to tell a story by complexity.
