Chef Ludo Lefebvre to Bring New Oyster Bar Downtown

Vegas Seven first received word that chef Ludo Lefebvre may be opening a restaurant in Las Vegas several weeks ago, and we now know that this is indeed the case. While Lefebvre—trained by Alain Passard and Joel Robuchon—is no stranger to the local scene, having opened Lavo in the Palazzo, true fame came once he decamped for Los Angeles. There he opened his chic pop-up LudoBites, and many credit him with starting the pop-up restaurant craze. Lefebvre also operates one of L.A.’s best food trucks and co-owns the white-hot Trois Mec (“Three Dudes”; intentionally misspelled, for you Francophiles) with Animal’s Jon Shook and Vinny Dotolo. A space in Las Vegas has yet to be locked down, but Le Thai co-owner and Lefebvre’s partner Puoy Premsrirut confirmed that the space will be Downtown.

Premsrirut, a lawyer by day as well as a self-proclaimed foodie with plans for several new restaurants, says, “I really love a great bouillabaisse, but other oyster bars currently in Las Vegas are sometimes a bit inconsistent. I had been talking to Ludo for about doing a concept together for a while, and we thought we could perfect an oyster bar concept together.

“Much like Trois Mec operates with tickets in L.A., we will utilize a similar reservation system, but with a twist! You can order online or at the window and receive a ticketed time for when a table and your food will be ready. I think it will be great for other lawyers and people who work Downtown who come in at lunch and definitely help streamline our lunch and dinner services.”
