Hear that? That’s the sound of Las Vegas chefs sharpening their knives in anticipation. Vegas Seven dining critic Max Jacobson will be in the hot seat at Roasting Las Vegas, a benefit for Three Square, along with Al Mancini and John Curtas on September 3 at the food bank’s warehouse. The three Eating Las Vegas co-authors will get a taste of their own medicine courtesy of chefs including Bratalian’s Carla Pelegrino, Food Network Star’s Vegas Vic, Bar+Bistro’s Beni Valasquez, STK’s Stephen Hopcraft and the Mina Group’s Gary LaMorte, among others.

“A lot of these chefs have axes to grind with one or all of us. Some have been vetoed from past editions of the book. Others were never included. Others have received negative reviews from us, “ Mancini says.

“I’m hoping the chefs won’t hold back, and tell us what they really think of us, “ says Jacobson. “If they do, I’m sure to come out way ahead of those other two jokers.” (7-9 p.m., $25 includes food and drinks, ThreeSquare.org.)
