The newest addition to Red Rock Resort’s collection of restaurants is a meaty one. But it doesn’t have to be all brisket and ribs, especially in this heat. The barbecue chicken salad takes the technique Lucille’s does best—smoking and grilling, in this case a chicken breast—and builds a dish around it. Paired with crunchy greens and other summery ingredients, such as fresh corn and cucumbers, the tall salad is tossed with barbecue ranch dressing, black beans and cheddar, and is topped with a mound of onion strings. When’s the last time you ate barbecue that was hearty and relatively healthy?
