Since Las Vegas gets an extended summer, we can revel in a slightly longer period of the season’s best at their peak. Comme Ça’s rectangular starter has a golden-brown puff pastry base, which crackles as you cut into it, and lovely herbed goat cheese smeared as a foundation. Thin, almost shaved rounds of zucchini, yellow squash and tomato alternate over the base of goat cheese and olive oil, so that each bite is different from the last.
