Chef Natalie Young’s breakfast and lunch emporium Downtown has the best pancakes in Las Vegas; everyone raves about their fluffy insides and crisp edges, and rightly so. They ooze drops of melted butter, and the little jars of Vermont maple syrup served alongside do justice to them. Also on the breakfast docket here are steel-cut oats topped with a cinnamon-roasted apple compote; eggs motuleños, which have red and green chiles and black beans; a terrific, if conventional, Benedict; and great coffee. 707 Carson St., 534-1515.
