There are incarnations of the traditional English dessert at all of Ramsay’s restaurants here, each of which begins with rich, spongy date cake soaked with toffee sauce. His Pub & Grill at Caesars Palace offers a classic, more rustic presentation with vanilla ice cream, while BurGR at Planet Hollywood gives us a whimsical push-pop form with peanut-butter ice cream. But our winner is the version served at Gordon Ramsay Steak. Perhaps it’s the accompanying brown-butter ice cream, whose flavor balances the sweet pudding better than the other ice creams. But in the back of our heads, we know we most love it because it’s shaped like a stick of butter. $14, in Paris Las Vegas, 946-4663.
