Michigan resident Shawn McClain may not be the celebrity chef his Aria colleagues Michael Mina and Jean-Georges Vongerichten are, but since he is now devoting nearly all of his time and energy to Las Vegas (he also owns the Aria pizzeria Five50, another one of our winners), his signature restaurant, Sage, is better than ever. This cavernous art-deco dining room has a sleek bar with terrific libations such as the Aviation to warm you up for his globally tinged American comfort cuisine. Appetizers can be anything from Kusshi oysters with Tabasco sorbet to innovative foie gras custard brûlée. Many of the entrées are beguiling, too; there is even a creative vegetarian tasting menu. There’s a huge beer list, and a wine list nearly as daring as the restaurant’s menu. They make for perfect pairings, such as McClain’s slow-poached organic farm egg with a bottle of Duvel Belgian Ale, or Wagyu beef tartare made heavenly with a glass of an American boutique wine.
