My style is influenced by … that classic, clean, ’50s and ’60s look with the fitted suits like in Mad Men. I like how JFK and James Bond used to dress with the pocket squares.
In this business … it’s important to buy suits that are ready for a bit of a beating. You need to make sure the style is nice, but you also need to make sure you’re buying quality suits and shoes and ties that can withstand both the restaurant and the kitchen.
I went to an international high school in Morocco … so I had friends from all over. We’d go to Spain or France during long weekends or a holiday. We’d take the train up to Tangier, which is in the north of Morocco. And then we’d ferry by boat into Spain, which is an hour’s ride into Algeciras, and we’d take the train up to Málaga, or up to Madrid, and just party for a couple of days and come back down.
I played a lot of soccer growing up … and I still do here in the States. I came here for college when I was 18. My father had a Spanish restaurant, and I used to work there with him, so I knew I wanted to be in hotels and restaurants. While in high school I researched the best hotel schools, and that’s how I ended up in Las Vegas attending UNLV.
