When the Palms decided it was time for venerable night spot Ghostbar to receive a renovation—relocating the DJ booth front and center, updating the color scheme and adding a fireplace and suite of leather high-back booths—attention was not limited to the furnishings and fixtures. At the bar, a new all-rosé Champagne cocktail menu of five cocktails ($25 each) that adds a well-placed touch of elegance to a lounge that already enjoys two lives: one as a sexy lounge early in the evening and a second later on as an intimate nightclub. The Sorbellini (a frosty take on the classic Bellini) features house-made peach sorbet, guava juice and Perrier-Jouët Blason Rosé, and is the top seller. But the more adventuresome should go straight for the Thorny Pear, which manages to combine Grey Goose La Poire vodka, Fireball liqueur and Champagne to surprisingly delicious effect—a little bit country, a little bit rock ’n’ roll.

In a mixing glass, combine 1 ounce Kerns guava juice and 1 small scoop (approximately 1 ounce) peach sorbet, softened. Add ice, cover, shake and strain into a chilled Champagne flute. Top with Perrier-Jouët Blason Rosé Champagne and garnish with a dehydrated peach from DressTheDrink.com.
