Completing a recent culinary switcheroo, Andiron chef Joe Zanelli will take over at Botero in Encore after September 1. On July 22, word came that chef Paul Bartolotta would be decamping from his Bartolotta Restorante Di Mare in Wynn. The hotel confirmed that by year’s end, Botero executive chef Mark LoRusso would take the reins of the new Restorante Di Mare after the first of the year, leaving the Botero position open.
Zanelli is a known commodity, having worked at Wynn’s Lakeside restaurant, as well as its previous incarnation as DB Brasserie, and he has been making culinary waves in Summerlin. In a statement sent exclusively to Vegas Seven, Wynn senior vice president of marketing and communications Michael Weaver said, “We are delighted to welcome Joe Zanelli home to Wynn as executive chef of Botero.”
As for Zanelli’s plans for the space, mum is the word. But we expect him to put his own unique spin on the menu. Steve Wynn is known for keeping his resorts fresh, as is evidenced by Encore’s recent renovations of its guest rooms, and Wing Lei and Bartolotta. In fact, we hear a Botero refresh, coupled with the Zanelli’s return, could be in order after January 1.
