You may be looking forward to an extra day off this Labor Day weekend, but High West Distillery owner David Perkins and his staff will be hard at work on September 7, putting the proverbial golden spike into his massive new—and might I add, handsome—distillery at Blue Sky Ranch, just outside Park City, Utah.
Call ahead (435-649-8300, HighWest.com) to secure a guided tour that begins in the visitors center, then takes you to the clerestory-lit and -cooled distillery—both aesthetically designed with the area’s rich mining origins in mind. Along the stillhouse wall, greet the first of four gleaming Forsyths copper stills. Observe whiskey-making in progress from the Eagle’s Nest, watch the bottling line, then tuck into farm-to-table cuisine in the café.
High West Distillery at Blue Sky Ranch (a real cattle ranch, with a boutique luxury hotel in the works) is also available for fireside nuptials and other special events, such as the recent Park City Food & Wine opening night party on July 9. A fall visit ensures perfect leaf-peeping, and you can get your apres-ski whiskey fix in winter.
