The restaurant formerly known as Botero has a new name: Jardin. French for “garden,” Jardin will offer three meal periods, as well as brunch on weekends. Expect elevated, yet casual modern café cuisine, including an already highly anticipated chicken sandwich.
Botero opened in December 2008 along with the Encore tower, and served as a sort of high-class commissary to XS’ beautiful people in need of nourishment before losing their minds in the megaclub next door. The airy, impressively appointed restaurant closed in November amid a property-wide Wynn Resorts shuffling of the chef deck that moved Botero’s opening chef Mark LoRusso to Bartolotta (now Costa di Mare) and pulling Joseph Zanelli from Downtown Summerlin’s Andiron Steak & Sea.
Zanelli will helm Jardin, which is also rumored to have a highly curated cocktail program. An opening date has yet to be announced.
