After putting in time in Las Vegas at Bouchon and Le Cirque, Thomas Griese left to run some kitchens for Michael Mina, most recently at Mina Test Kitchen in San Francisco. He’s returned to town to help relaunch Charlie Palmer’s aging steakhouse. Griese’s arrival coincides with the recent physical renovation of the Four Seasons institution, and the new exec has breathed similar new life into the food through French techniques and Asian ingredients. New items are being introduced gradually, but the experiments so far have been exciting and delicious, leaving us anxiously awaiting what’s next.
