The Venetian’s Bourbon Lounge made perfect sense for the property when Rock of Ages was lifting voices and spirits there. However, with the show moving to its new home in the Rio (at least until January 1), the raucous, whiskey-fueled casino lounge seemed out of place in the Venetian’s elegant, Italianate environs. Enter The Dorsey, an intimate, upbeat cocktail bar with a Manhattan pedigree.
Set to debut in December, The Dorsey brings together David Rabin, the creative mind behind New York City hotspots Café Clover, The Skylark and JIMMY at the James with a cocktail program by award-winning bartender Sam Ross of Milk & Honey and, later, Attaboy fame. (Ross also created the cocktail program at the now-shuttered Comme Ça in the Cosmopolitan.)
According to reps for the project, The Dorsey will be “a high-design, memorable cocktail spot for the worldly, curious and engaged,” featuring old-school service style for its modern and classic cocktails and a palette of gold and black that inspires “a ‘devil-may-care’ sense of possibility.”
The Dorsey continues the Manhattanization of Las Vegas’ food and beverage scene that has already brought us Skyfall in the Delano, with a bar program by Proprietors LLC—the team behind New York City’s Death & Co, Nitecap and One Fifty One—and the impending arrivals of NoMad Restaurant & Bar and Eataly at the NoMad Hotel and Momofuku, Milk Bar and Zuma in the Cosmopolitan.
A hiring event for The Dorsey will be held noon-3 p.m. October 18 at the Palazzo Theater for all positions.
