Created and co-founded by acclaimed chef Rainer Becker, Zuma, located inside The Cosmopolitan of Las Vegas, marks the iconic brand’s 11th location in its international collection. Zuma takes its inspiration from the popular Japanese izakaya, where guests enjoy a dining and drinking style that uniquely embraces every element of Japanese cooking under one roof. The foundation of Zuma’s philosophy offers an authentic and complete dining experience, where all elements are of equal importance and each complements the taste and flavor of the cuisine. Within the 9,000-square-foot space, Zuma captures beauty of the four natural elements—earth, fire, water and air—as well as wood, rusted iron, stone and glass, for a texturally rich and sophisticated yet relaxed ambiance. The reception desk, bar and sushi counter are made of grand tree trunks sourced from Thailand. The patchwork wall in the lounge has been created from boldly colored Japanese paper.

Zuma’s menu features a variety of dishes from its three kitchens—the main kitchen, the sushi counter and the robata grill. True to the izakaya experience, guests are offered dishes designed to be shared and brought to the table continuously throughout the meal. The main kitchen includes dishes such as suzuki no sashimi (seabass sashimi with yuzu, truffle and salmon roe); hourensou no homa ae (blanched baby spinach with creamy sesame dressing); and the tsubu-miso hinadori no oven yaki (baby chicken oven roasted with barley miso on cedarwood). The sushi counter includes offerings such as wagyu gunkan no caviar (wagyu beef, ginger and caviar); dynamite spider roll (soft-shell crab, chili and wasabi tobiko mayo); and the spicy yellowtail roll (yellowtail, serrano pepper, avocado and wasabi mayo). The robata grill includes gyuhire sumibiya kikarami zuke (spicy beef tenderloin with sesame, red chili and sweet soy); tori no tebasaki (sake glazed chicken wings, sea salt and lime), one of Chef Rainer’s personal favorites; and the wagyu tomahawk steak (28 oz. steak with fresh truffle).

Complementing Zuma’s menu is a bar program featuring heritage cocktails, using fresh juices, fruits and ingredients such as sake, shochu, yuzu and shiso leaves. A few compelling cocktails include the rubabu, rhubarb infused sake, vodka, passion fruit and lemon; geisha smash with Ketel One, shiso leaves, cucumber, elderflower and yuzu; and the yuzu paloma, with tequila blanco, homemade yuzu Campari, soda and green tea salt.
