Local chef brings a pop-up dining experience to create buzz for upcoming restaurant.

Truffle fries, sweet potato tots, fried pickles and cauliflower “wings” from Burger Joint

A vegan-only burger joint—it’s a sign of the times. OK, maybe the Las Vegas food scene hasn’t evolved that much, but it’s well on its way. Executive chef Jose Navarro of Henderson-based Burger Joint is hosting Plant(ivore), a pop-up dining event on May 8. The culinary experience is a vegan four-course meal that’s a teaser to his upcoming restaurant of the same name, which he plans to open at the end of the year.

“There is a definite need for more plant-based options in town,” Navarro says. “Right now, there are less than 10 which are strictly plant-based. There are even less which exclusively serve plant dishes without re-creating omnivore options.”

Inspired by his daughter’s veganism, he’s already got veggie options on his menu at Burger Joint. For the pop-up, dishes include an heirloom potato croquette and smoked jalapeno chutney amuse-bouche as well as a slow-roasted King Trumpet mushroom, toast, curried-roasted pineapple entrée. An alcohol pairing is optional.

Converting Burger Joint into a vegan hotbed for one night isn’t just for the plant eaters, either. “I want people to come to Plant(ivore) because the food is amazing,” explains the former Strip chef. “Plants are so versatile and nutritional. The restaurant—and forthcoming pop-ups—celebrates these ingredients.”

The pop-up takes place from 4–10 p.m. and seatings are every 15 minutes. The restaurant will confirm a time once a ticket is purchased. 10890 S.
