You don’t need a special occasion to enjoy CRAFTkitchen’s birthday cake pancakes.
The rainbow-colored treat is one of the restaurant’s favorites from its ever-changing weekend brunch menu. The dish appears occasionally as a weekend special—announced Fridays on CRAFTkitchen’s social media pages. And the pancakes are back again just in time for the Henderson eatery’s two-year anniversary.
On October 28 and 29, husband-and-wife team Jaret and Tami Blinn celebrate their success with an “all-star” brunch, featuring patrons’ favorite items, which include pumpkin waffles, crab cake benedict, oxtail fries and seasonal pop tarts, in addition to the confetti-filled flapjacks.
Despite the pancakes’ popularity, Chef Jaret isn’t personally a fan.
“Everyone likes the confetti pancakes. I don’t get it,” he says with a laugh.
The key might be in its simplicity. There are no hidden ingredients in his pancake batter; they’re just executed really well, resulting in thick, fluffy cakes, topped with sprinkles and drizzled with a syrupy cream cheese frosting.
“We’re finding the more complicated we make something, the more people don’t like it,” the chef says.
CRAFTkitchen, which is open daily for breakfast, lunch and brunch, focuses on creative, seasonal offerings. It has introduced more than 100 brunch items, and customer favorites either become permanent menu items or appear occasionally as “all-stars.”
“We’ll know immediately after a day if we’re doing something wrong [with a new item]. Our regulars will tell us,” Blinn says.
