The shuttering of D.O.C.G. left a void in The Cosmopolitan’s third-floor dining district. Word on the street is that space will soon be transformed into an ultra-high-end Chinese eatery. Senior Cosmopolitan food and beverage staff say that the hotel will actually operate the restaurant themselves so this will not be a lease space, and it has tapped a former executive chef of The Mansion at MGM Grand to helm the project. This makes sense, as The Mansion boasts some of the city’s most luxe accommodations for the largest “whales.” And this very exacting clientele is catered to in The Mansion’s private restaurant with menus that focus on Continental and Asian-inspired cuisine.
According to sources, The Cosmopolitan has already tested the water with its new concept by hosting a VIP pop-up in the D.O.C.G. space over Chinese New Year and the feedback was overwhelmingly positive. Expect the build-out to commence imminently and doors to open later this year.
